so last night for supper i was in a hurry cause of church and tired from the crazy week it has been so far!! so ..in need of something simple and with a ton of potatoes to use i decided on potato soup. but then i had to modify it cause i never follow a recipe exactly. so here is my modified potato soup recipe!

potato, corn and ham chowder

3 1/2 cups peeled and diced potatoes
1/3 c finely chopped onion
3/4 cup cooked, diced ham
3 1/4 c water
1 can whole kernel corn (drained)

combine in stockpot bring to boil reduce to med/hi and cook 15 min.

2tbs chicken bouillon (i used 4 cubes)
1/2 tsp salt
1 tsp pepper

add this to the stockpot

5 tbs butter
5tbs flour
2c milk

melt butter in a pan , whisk in flour cook for 1 min on med heat. slowly stir in milk whisking to avoid lumps. add to stockpot and cook till heated through.( i let mine cook about 30-45 min so it would thicken more like chowder) (i also add some cornstarch to thicken it more ..i don't like runny potato soup!!) now i added some garlic powder to mine and(2 tsp) and some parsley (2 tsp) and more pepper and salt than it called for. but it was so yummy and easy to make!! i doubled the recipe so we had leftovers for today and it was even better the second time around!!!

so here is the peach cobbler recipe!!! i use this one a lot . it is so easy and cheap and you always have the stuff to make it as long as there are peaches in the cupboard(home canned or store bought) cause you know after the week i have had... i deserved some dessert!

poor woman's cobbler:

melt 1 stick of butter in a 9 x13 pan. add peaches(juice and all) mix together 1 1/2 c flour, 1 1/2 c sugar, 1 1/2 c milk. pour over top and bake at 350 for about 1 hour!! so good warm with vanilla ice cream on top!!

made a yummy, cheap and easy supper!!!!
